JODLGOLD represents a culinary cultural heritage that has been passed down through generations. Inspired by the Tyrolean Prügeltorte, it has been reinterpreted as a modern delicatessen pastry.
The origins of the Prügeltorte date back to the Middle Ages. During the Almabtrieb, farmers' families layered a sweet egg white dough over an open fire on a rotating wooden roller. The turning motion was reminiscent of the sound of yodelling that accompanied the festival. According to legend, in the 19th century, a Tyrolean farmer's wife named Rosl gave it the name Jodeltorte, because ‘every bite yodels in your mouth.’ Over time, the pastry became a staple of all kinds of Alpine celebrations.
